Healthy Food That Doesn’t Suck

I mentioned last week that I would be making some lifestyle changes and of course, that would include eating healthier. However, I would rather shoot myself in the face than eat rice cakes and tofu. That’s just not real food. Humans are supposed to eat meat. That being said, eating healthier doesn’t really mean you have to cut certain things entirely out of your diet. Just meat that’s low fat, low sodium, fresh natural veggies and less rice, pasta, etc. Luckily for me, I’m relatively good at cooking so I can make some of this stuff pretty good.


Last night I made this: a chicken breast with grilled mushrooms, spinach and baked asparagus. The chicken is covered with some pepper and rosemary, no salt. Normally, I hate chicken breast since it’s incredibly dry but if you cook it properly, it’s quite good. Sear both sides in a frying pan at high heat until both sides are a crisp brown and then stick the pan in the oven at 400F. The mushrooms are grilled on my George Foreman and then tossed into the pan to get baked with the chicken. Mushrooms release quite a bit of liquid so that adds to the moistness of the chicken. About 15 minutes, depending on the size and you’ll end up with a juicy piece of chicken that nearly falls apart with just a fork.

Fresh asparagus don’t need to be overly prepared. Coat them with a bit of olive oil, pepper and sprinkle a little parmigiano reggiano on top, put it on a vented tray and stick that in the oven before you start the chicken. They should be done by the time everything else is finished and still be moist and juicy inside. Spinach is also simple…right before you eat, stick a bunch in a boiling pot of water for 20 seconds and then drain.

And it’s pretty good too. No salt, sugar or anything added. I know mushrooms have little nutritional value but hey, I love mushrooms.

dang! that looks hella good! yummmmmm!! ed will you cook for me?? :D lol i’ve never been able to make juicy chicken breast. i thought that was like an oxymoron or something. i woulda thrown salt all over that plate tho… only bc i have no self control…

Another damn food post an hour before lunch, you guys are killing me. That does look nice, although I like my asparagus done on the barbecue. Just throw it right on the grill, good stuff.

You might consider Dr. Peter D’adamo’s work on eating according to your blood type. If your a type AB, you should be a vegetarian for optimal health. If you an O, you need to be a meat eater. His web site is at http://www.dadamo.com/.

Yeah, nothing beats a Juicy, Thick AAA Angus Steak cooked to perfection (Medium-raw) on a Barbeque :)

I went out with a vegetarian for a year and that was bad enough. Although I did have fun whenever I had a meat lovers pizza from pizza hut and watching her drool with crazy bloodlust while she was eating hay or oats or something like that.

I like to stir fry asparagus with butter and olive oil with some black pepper I put them in the pan.

Looks like you’re on The Zone diet! 2/3 veggies/fruits and 1/3 protein on your plate.
